About Award Winning Head Chef - John Hughes
 

Trained at Langans Brasserie in Piccadily, John was Head Chef at the prestigeous Gregan's Castle Hotel in County Clare where he was awarded two AA Rosettes. Prior to starting Marmion Catering Limited he was Head Chef at the Falcon Hotel, Castle Ashby, near to Northampton where he now lives.

John has been in the catering industry for over 25 years and brings a wealth of experience to satisfying the most demanding of needs.

With a well proven track record John is an excellent communicator and prides himself on his ability to swiftly build effective relationships - thereby quickly building and/or working within teams that deliver success.

 

Self-motivated and driven John is equally at home leading or supporting within any kitchen environment - his presence undoubtedly adding to both professional standards and stability.

 

Open and honest John has no hidden agenda and both gives and receives feedback as appropriate - is positive and non-political.

 

Previous experience has allowed John to develop a strong and varied approach to menu development based around both traditional and new dishes embracing local produce whenever possible - providing an open but quality driven output.

 

With a full knowledge of current H&S legislation together with extensive experience of stock control and costings from his most recent experience - you can rely upon his ability to bring the highest standards with him.
